  • 1.5 lb chicken breasts boneless, skinless
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 2 cups baby spinach fresh
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 0.5 tsp dried oregano
  • 0.5 tsp salt adjust to taste
  • 0.25 tsp black pepper
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced

Instructions

Preparation Steps

  • Heat olive oil in a pan over medium heat and sauté diced onion and minced garlic until translucent.
  • Place chicken breasts in the crock pot and add sautéed onions and garlic.
  • Pour in chicken broth, heavy cream, garlic powder, onion powder, dried basil, oregano, salt, and black pepper.
  • Cover and cook on low for 4-5 hours, or until the chicken is cooked through.
  • Shred the chicken using two forks, then add grated Parmesan cheese and baby spinach.
  • Stir until the cheese has melted and the spinach is wilted.
  • Serve hot, garnished with more Parmesan if desired.

Notes

For extra flavor, you can add crushed red pepper flakes or a few drops of hot sauce before serving.
