In a shallow bowl, mix the gluten-free flour, paprika, garlic powder, salt, and black pepper.
Dip each chicken thigh in the beaten egg, then dredge in the seasoned flour mixture until fully coated.
Lightly brush or spray olive oil over the coated chicken thighs.
Place the chicken thighs in the air fryer basket in a single layer. Cook for 18 to 20 minutes, flipping halfway through, until golden brown and cooked through.
Let the chicken rest for 5 minutes before serving.
