These crispy garlic parmesan potatoes are a perfect side dish, packed with flavor and crunch, seasoned with garlic and herbs, and topped with freshly grated parmesan cheese.
In a large bowl, combine halved baby potatoes, olive oil, minced garlic, salt, black pepper, and dried oregano. Toss until potatoes are well coated.
Spread the potatoes in a single layer on a baking sheet.
Bake for 35-40 minutes, or until the potatoes are golden brown and crispy, flipping once halfway through.
Remove from oven and sprinkle with freshly grated parmesan cheese. Return to oven for 5 more minutes, or until cheese is melted and golden.
Garnish with chopped fresh parsley before serving.
