  • 2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 0.5 cup parmesan cheese freshly grated
  • 1 tbsp fresh parsley chopped, for garnish
  • 1 tsp dried oregano

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine halved baby potatoes, olive oil, minced garlic, salt, black pepper, and dried oregano. Toss until potatoes are well coated.
  • Spread the potatoes in a single layer on a baking sheet.
  • Bake for 35-40 minutes, or until the potatoes are golden brown and crispy, flipping once halfway through.
  • Remove from oven and sprinkle with freshly grated parmesan cheese. Return to oven for 5 more minutes, or until cheese is melted and golden.
  • Garnish with chopped fresh parsley before serving.

Notes

These crispy potatoes are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days. Reheat them in the oven to retain their crispiness.
