In a large bowl, toss the potato wedges with olive oil, salt, pepper, garlic powder, and paprika.
Spread the potatoes on a baking sheet in a single layer.
Bake in the preheated oven for 30 minutes, turning halfway through the cooking time.
Sprinkle the Parmesan cheese over the potatoes and return to the oven. Bake for an additional 15 minutes, or until potatoes are golden brown and crispy.
Remove from the oven and sprinkle with chopped fresh parsley before serving.
