  • 1 lb Italian sausage mild or spicy, casings removed
  • 1 tbsp olive oil extra virgin
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream
  • 2 cups kale chopped
  • 1 cup Parmesan cheese grated
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground

Instructions

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
  • Add diced onion and sauté until soft. Stir in the garlic and cook for 1 minute until fragrant.
  • Pour in chicken broth and bring to a boil. Lower to a simmer and cook for 10 minutes.
  • Stir in heavy cream and chopped kale. Simmer for another 5 minutes.
  • Remove from heat and stir in Parmesan cheese until melted. Season with salt and black pepper to taste. Serve hot.
