Instructions
Preparation Steps
Melt the butter in a large pot over medium heat. Add the onion and garlic, and cook until the onion is translucent.
Stir in the flour, salt, pepper, and nutmeg, and cook for 1-2 minutes until the flour is fully incorporated.
Gradually whisk in the chicken broth and bring to a simmer.
Add the broccoli florets and cook until tender, about 10-15 minutes.
Blend the soup using an immersion blender until smooth.
Stir in the half-and-half and shredded cheddar cheese, and cook until the cheese is melted and the soup is creamy.
Adjust seasoning with salt and pepper as needed before serving.
Notes
For a vegetarian version, use vegetable broth instead of chicken broth. Garnish with extra cheese and croutons for added flavor.
