  • 6 slices bacon cut into small pieces
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth low-sodium preferred
  • 2 cans cannellini beans drained and rinsed
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh parsley chopped, for garnish

Instructions

Preparation Steps

  • In a large pot, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove from the pot and set aside.
  • Add the onion to the pot and sauté until translucent. Stir in the garlic and thyme and cook for another minute.
  • Pour in the chicken broth and add the cannellini beans. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
  • Use an immersion blender to puree the soup until smooth, or blend in batches using a stand blender and return to the pot.
  • Stir in the cream, salt, and pepper. Add the cooked bacon and let the soup heat through.
  • Serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, omit the bacon and use vegetable broth instead of chicken broth.
