Instructions
Preparation Steps
In a large pot, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove from the pot and set aside.
Add the onion to the pot and sauté until translucent. Stir in the garlic and thyme and cook for another minute.
Pour in the chicken broth and add the cannellini beans. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
Use an immersion blender to puree the soup until smooth, or blend in batches using a stand blender and return to the pot.
Stir in the cream, salt, and pepper. Add the cooked bacon and let the soup heat through.
Serve hot, garnished with fresh parsley.
Notes
For a vegetarian version, omit the bacon and use vegetable broth instead of chicken broth.
