  • 1.5 cups corn kernels fresh or frozen
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large egg lightly beaten
  • 0.5 cup milk
  • 2 tablespoons chopped green onions
  • 0.25 cup shredded cheddar cheese optional
  • 2 tablespoons vegetable oil for frying

Instructions

Preparation Steps

  • In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  • Add the beaten egg and milk to the dry ingredients and mix until a batter forms.
  • Fold in the corn, green onions, and cheese if using, until just combined.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
  • Cook for 2-3 minutes on each side, or until golden brown.
  • Remove from the skillet and drain on paper towels. Serve warm.

Notes

Serve with a dollop of sour cream or a squeeze of lime for added flavor.
