Instructions
Preparation Steps
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
Add the beaten egg and milk to the dry ingredients and mix until a batter forms.
Fold in the corn, green onions, and cheese if using, until just combined.
Heat the vegetable oil in a large skillet over medium-high heat.
Drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
Cook for 2-3 minutes on each side, or until golden brown.
Remove from the skillet and drain on paper towels. Serve warm.
