Instructions
Preparation Steps
In a saucepan, combine coconut milk, sugar, and salt. Cook over medium heat, stirring occasionally.
Once the mixture starts to simmer, add the cornstarch dissolved in water. Stir continuously until thickened.
Remove from heat and mix in the vanilla extract. Let it cool to room temperature.
Whip the whipping cream until soft peaks form, then gently fold it into the cooled coconut mixture.
Divide the mixture into serving glasses. Refrigerate for at least 2 hours or until set.
Garnish with toasted shredded coconut before serving.
