  • 3 eggs large, at room temperature
  • 0.75 cup unsalted butter melted
  • 1 cup shredded coconut sweetened or unsweetened, for topping

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together coconut milk, vanilla extract, and eggs.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Slowly add in the melted butter and mix until smooth.
  • Divide the batter evenly between the prepared pans and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  • Frost with cream cheese coconut frosting and sprinkle with shredded coconut before serving.
