Instructions
Preparation Steps
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together coconut milk, vanilla extract, and eggs.
Add the wet ingredients to the dry ingredients and stir until just combined. Slowly add in the melted butter and mix until smooth.
Divide the batter evenly between the prepared pans and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Frost with cream cheese coconut frosting and sprinkle with shredded coconut before serving.
