  • 8 oz macaroni noodles use elbow macaroni
  • 2 cups shredded cheddar cheese sharp cheddar recommended
  • 1 cup shredded mozzarella cheese use whole milk mozzarella
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk whole milk preferred
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground
  • 0.5 tsp paprika optional, for garnish

Instructions

Preparation Steps

  • Bring a large pot of salted water to a boil. Add macaroni and cook until al dente, about 8 minutes. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Add flour and whisk until smooth. Cook for 1 minute to eliminate raw flour taste.
  • Gradually whisk in milk. Cook, whisking constantly, until the mixture is thickened and bubbly.
  • Reduce heat to low. Stir in cheddar and mozzarella cheeses until melted and smooth. Season with salt and black pepper.
  • Add cooked macaroni to the cheese sauce and stir until well combined and heated through.
  • Serve hot, optionally sprinkled with paprika for a touch of color.
