  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon plus more for topping
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 2 large eggs room temperature
  • 0.5 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large apples peeled and diced

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the diced apples.
  • Pour the batter into the prepared cake pan, smoothing the top with a spatula. Sprinkle additional cinnamon on top if desired.
  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
