Preparation Steps
Preheat your oven to 375°F (190°C).
In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until the onion becomes translucent.
Add chicken pieces and cook until they are browned on all sides.
Stir in chicken broth, heavy cream, peas, carrots, mushrooms, thyme, basil, salt, and pepper. Let simmer for 10 minutes.
Add cooked rice to the pot and mix thoroughly.
Transfer the mixture to a greased 9x13 inch baking dish. Top with shredded cheddar cheese and panko breadcrumbs.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
Let rest for 5 minutes before serving.
