  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 2 cups chopped carrots
  • 1 cup mushrooms sliced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 2 cups cooked rice prepared according to package instructions
  • 0.5 cup panko breadcrumbs

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until the onion becomes translucent.
  • Add chicken pieces and cook until they are browned on all sides.
  • Stir in chicken broth, heavy cream, peas, carrots, mushrooms, thyme, basil, salt, and pepper. Let simmer for 10 minutes.
  • Add cooked rice to the pot and mix thoroughly.
  • Transfer the mixture to a greased 9x13 inch baking dish. Top with shredded cheddar cheese and panko breadcrumbs.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  • Let rest for 5 minutes before serving.
