  • 4 pieces chicken breasts
  • 3 cups sliced onions preferably yellow onions
  • 2 tablespoons butter
  • 1.5 cups shredded Swiss cheese
  • 1 cup beef broth
  • 2 teaspoons fresh thyme chopped
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper freshly ground

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper and brown each side for 3-4 minutes until golden.
  • Remove chicken and set aside. In the same skillet, melt butter and add sliced onions. Cook onions gently for about 15 minutes until caramelized.
  • Add beef broth and thyme to the onions, simmer for 5 minutes until slightly reduced.
  • Place chicken breasts in a baking dish. Spoon the onion mixture over the chicken, then sprinkle with shredded Swiss cheese.
  • Bake in preheated oven for 15 minutes or until chicken is cooked through and cheese is bubbly.
  • Remove from oven, let rest for 5 minutes, then serve warm.

This dish pairs well with mashed potatoes or steamed green beans.
