Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper and brown each side for 3-4 minutes until golden.
Remove chicken and set aside. In the same skillet, melt butter and add sliced onions. Cook onions gently for about 15 minutes until caramelized.
Add beef broth and thyme to the onions, simmer for 5 minutes until slightly reduced.
Place chicken breasts in a baking dish. Spoon the onion mixture over the chicken, then sprinkle with shredded Swiss cheese.
Bake in preheated oven for 15 minutes or until chicken is cooked through and cheese is bubbly.
Remove from oven, let rest for 5 minutes, then serve warm.
