Instructions
Preparation Steps
Preheat the oven to 350°F (175°C).
In a large bowl, combine corn kernels, shredded cheddar cheese, sour cream, and melted butter. Stir to mix well.
Add the cornbread mix, chopped green onions, paprika, cumin, salt, and black pepper to the bowl. Mix until just combined.
Fold in the diced jalapeño pepper.
Pour the mixture into a greased 9x13 inch baking dish.
Bake in the preheated oven for 35-40 minutes, or until the casserole is golden brown and a toothpick inserted in the center comes out clean.
