  • 1 cup cornbread mix
  • 0.5 cup green onions chopped
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper freshly ground
  • 1 jalapeño pepper deseeded and diced

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine corn kernels, shredded cheddar cheese, sour cream, and melted butter. Stir to mix well.
  • Add the cornbread mix, chopped green onions, paprika, cumin, salt, and black pepper to the bowl. Mix until just combined.
  • Fold in the diced jalapeño pepper.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Bake in the preheated oven for 35-40 minutes, or until the casserole is golden brown and a toothpick inserted in the center comes out clean.
