  • 2 cups chicken broth low sodium recommended
  • 1.5 cups long grain white rice
  • 3 cups cooked chicken shredded
  • 2 cups cheddar cheese shredded
  • 1 can cream of chicken soup

Instructions

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine chicken broth, rice, cooked chicken, cream of chicken soup, and half of the cheese.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • Cover with aluminum foil and bake for 35 minutes.
  • Remove foil, sprinkle remaining cheese on top and bake for another 10 minutes, or until cheese is melted and rice is tender.

Notes

For a spicy kick, add a dash of hot sauce to the mixture before baking.
