Instructions
Preparation Steps
Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with olive oil.
Slice the zucchini into thick rounds, about 1/4 inch thick.
In a small bowl, beat the egg.
In another bowl, combine the mozzarella cheese, Parmesan cheese, panko breadcrumbs, Italian seasoning, garlic powder, salt, and pepper.
Dip each zucchini round in the beaten egg, then coat them in the cheese and breadcrumb mixture.
Place the coated zucchini rounds on the prepared baking sheet.
Bake in the preheated oven for 25 minutes, or until the cheese is melted and golden brown.
Remove from the oven and let cool slightly before serving.
