  • 1 lb ribeye steak thinly sliced
  • 1 tbsp olive oil extra virgin
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
  • 2 cups shredded cheese cheddar or Mexican blend
  • 8 flour tortillas large size
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 0.5 tsp garlic powder

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the sliced onions and bell peppers to the skillet and sauté until tender.
  • Add the sliced steak to the skillet. Season with salt, pepper, and garlic powder. Cook until steak is browned.
  • Remove the steak, onions, and peppers from the skillet and set aside.
  • In a clean skillet, place a tortilla and sprinkle with 1/4 cup of cheese, 1/4 of the steak filling, and another 1/4 cup of cheese. Top with another tortilla.
  • Cook on medium heat until the bottom tortilla is brown and cheese begins to melt, then flip to brown the other side.
  • Repeat with remaining tortillas and filling.
  • Slice quesadillas into wedges and serve warm.

Notes

Serve with sour cream, guacamole, or salsa for extra flavor!
