  • 12 oz penne pasta
  • 1 lb large shrimp peeled and deveined
  • 2 cups spinach fresh
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp butter unsalted
  • 3 cloves garlic minced
  • 0.5 tsp red pepper flakes optional, for heat
  • 0.25 tsp salt to taste
  • 0.25 tsp black pepper freshly ground, to taste

Instructions

Preparation Steps

  • Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, melt the butter. Add the garlic and cook until fragrant, about 1 minute.
  • Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  • Pour the heavy cream into the same skillet. Bring to a simmer, then reduce heat to low and stir in Parmesan cheese until melted and smooth.
  • Add the spinach to the sauce, cooking until wilted. Season with salt, pepper, and red pepper flakes.
  • Return the cooked shrimp and pasta to the skillet, tossing to coat with the sauce. Serve immediately.
