  • 1.5 lb ground beef lean
  • 1 cup onion diced
  • 1 cup bell pepper chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14 oz
  • 1 cup cooked rice white or brown
  • 2 cups sharp cheddar cheese shredded
  • 0.5 cup sour cream
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 1 tsp paprika

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Add onion, bell pepper, and garlic to the skillet. Sauté until the vegetables are soft.
  • Stir in the diced tomatoes, cooked rice, sour cream, salt, pepper, and paprika.
  • Pour the mixture into a 9x13 inch (23x33 cm) baking dish. Sprinkle shredded cheddar cheese on top.
  • Bake in preheated oven for 25-30 minutes until the cheese is melted and bubbly.

Notes

Serve hot, and garnish with fresh parsley if desired.
