Instructions
Preparation Steps
In a small bowl, combine soy sauce, oyster sauce, sesame oil, and cornstarch mixture. Set aside.
Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes.
Remove chicken from the pan and set aside. In the same pan, add garlic and ginger, sauté for about 1 minute until fragrant.
Add bell peppers, broccoli florets, and carrots to the pan. Stir-fry for about 3-4 minutes until vegetables are tender-crisp.
Return the chicken to the pan and add the sauce mixture. Stir well to coat everything evenly. Add cashews and toss to combine.

This dish is best served immediately, with steamed rice or noodles on the side.
