Ingredients

Main Ingredients

  • 1.5 pounds chicken breast cut into bite-sized pieces
  • 1 cup cashews unsalted
  • 2 tablespoons soy sauce low sodium
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch dissolved in 1 tablespoon of water
  • 2 tablespoons vegetable oil for cooking
  • 1 cup bell pepper sliced

  • 2 cloves garlic minced

Instructions

Preparation Steps

  • Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes.
  • Remove chicken from the pan and set aside. In the same pan, add garlic and ginger, sauté for about 1 minute until fragrant.
  • Add bell peppers, broccoli florets, and carrots to the pan. Stir-fry for about 3-4 minutes until vegetables are tender-crisp.
  • Return the chicken to the pan and add the sauce mixture. Stir well to coat everything evenly. Add cashews and toss to combine.
