  • 2 pounds carrots peeled and chopped
  • 0.5 cup sugar
  • 0.25 cup butter melted
  • 3 eggs beaten
  • 3 tablespoons flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • Boil carrots in a large pot of water until soft, about 15 minutes.
  • Drain carrots and transfer to a large bowl.
  • Mash carrots with a fork or potato masher.
  • Add sugar, butter, eggs, flour, baking powder, and vanilla, and mix until well combined.
  • Pour mixture into a greased 2-quart baking dish.
  • Bake in the preheated oven for 45 minutes, or until souffle is slightly browned on top.

Notes

Be careful not to overmix the batter to keep the souffle light and fluffy.
