  • 1 pound ground beef 80/20 preferred
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups cabbage chopped
  • 1 cup white rice uncooked
  • 4 cups beef broth
  • 1 can tomato sauce 15 oz
  • 1 can diced tomatoes 15 oz
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add onion and garlic. Sauté until onion is translucent.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in tomato paste, salt, black pepper, thyme, and paprika. Cook for 1-2 minutes.
  • Add chopped cabbage, rice, tomato sauce, diced tomatoes, and beef broth. Bring to a boil.
  • Reduce heat and simmer for 30 minutes, stirring occasionally, until the rice is tender.
  • Adjust seasoning if necessary and serve hot.

Notes

This soup can be stored in the refrigerator and tastes even better the next day as the flavors develop.
