Instructions
Preparation Steps
Preheat the oven to 350 degrees Fahrenheit.
In a large pot, melt the butter over medium heat. Add the onion and cook until softened.
Stir in the rice and cook for 1-2 minutes until the rice is lightly toasted.
Add the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
Stir in the broccoli, cream of mushroom soup, salt, and pepper. Mix well.
Transfer the mixture to a greased casserole dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 30 minutes until the cheese is bubbly and the top is golden brown.
Notes
For a non-vegetarian twist, add cooked, shredded chicken to the casserole mix before baking.
