  • 2 cups broccoli florets fresh or frozen
  • 1 cup uncooked white rice
  • 3 cups chicken broth or vegetable broth for vegetarian option
  • 1 cup cheddar cheese shredded
  • 1 can cream of mushroom soup 10.5 oz
  • 1 small onion finely chopped
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

Preparation Steps

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large pot, melt the butter over medium heat. Add the onion and cook until softened.
  • Stir in the rice and cook for 1-2 minutes until the rice is lightly toasted.
  • Add the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  • Stir in the broccoli, cream of mushroom soup, salt, and pepper. Mix well.
  • Transfer the mixture to a greased casserole dish. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 30 minutes until the cheese is bubbly and the top is golden brown.

Notes

For a non-vegetarian twist, add cooked, shredded chicken to the casserole mix before baking.
