Spread butter evenly on one side of each slice of bread.
Place buttered side down, layer slices of cheese, and add blueberries to two slices of bread.
Drizzle honey over the blueberries, and then sprinkle a pinch of salt.
Top with the other slice of bread, butter side up.
Heat a non-stick skillet over medium heat and grill each sandwich until the bread is golden brown and the cheese has melted, about 2-3 minutes per side.
Notes
For an extra flavor kick, you can add a sprinkle of cinnamon to the blueberries.
