Instructions
Preparation Steps
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, beat the egg whites until stiff peaks form.
In a separate bowl, mix together the cottage cheese, egg yolks, honey, and vanilla extract until smooth.
Gently fold the egg whites into the cottage cheese mixture.
Add flour, baking powder, and salt, and mix until just combined.
Carefully fold in the blueberries.
Spoon the mixture onto the prepared baking sheet, forming round cakes.
Bake for 20-25 minutes, or until golden brown and set.
