  • 0.75 cup Cottage Cheese full-fat recommended
  • 2 tablespoons Honey or maple syrup
  • 1 teaspoon Vanilla Extract
  • 0.5 cup All-Purpose Flour or whole wheat flour
  • 1 teaspoon Baking Powder
  • 0.25 teaspoon Salt
  • 1 cup Blueberries fresh or frozen

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the egg whites until stiff peaks form.
  • In a separate bowl, mix together the cottage cheese, egg yolks, honey, and vanilla extract until smooth.
  • Gently fold the egg whites into the cottage cheese mixture.
  • Add flour, baking powder, and salt, and mix until just combined.
  • Carefully fold in the blueberries.
  • Spoon the mixture onto the prepared baking sheet, forming round cakes.
  • Bake for 20-25 minutes, or until golden brown and set.

Notes

Serve the cloud bread warm, drizzled with additional honey or a dollop of whipped cream, if desired.
