Instructions
Preparation Steps
Heat olive oil in a large pot over medium-high heat. Add beef and sear until browned on all sides.
Add onions and garlic to the pot and cook until onions are translucent.
Stir in the tomato paste, thyme, and rosemary.
Pour in beef broth and bring to a boil. Reduce heat, cover, and simmer for 1.5 hours.
Add carrots, potatoes, and peas. Simmer for another 30-45 minutes until vegetables are tender.
Season with salt and pepper to taste before serving.
Notes
This stew can be made ahead and tastes better the next day. For a winning dish, serve with crusty bread.
