  • 2.5 lbs beef chuck roast cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 1 cup peas frozen
  • 0.5 tsp pepper to taste
  • 1 tsp salt to taste

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium-high heat. Add beef and sear until browned on all sides.
  • Add onions and garlic to the pot and cook until onions are translucent.
  • Stir in the tomato paste, thyme, and rosemary.
  • Pour in beef broth and bring to a boil. Reduce heat, cover, and simmer for 1.5 hours.
  • Add carrots, potatoes, and peas. Simmer for another 30-45 minutes until vegetables are tender.
  • Season with salt and pepper to taste before serving.

Notes

This stew can be made ahead and tastes better the next day. For a winning dish, serve with crusty bread.
