  • 4 lbs russet potatoes peeled and cut into cubes
  • 1 cup sour cream
  • 0.5 cup milk whole or 2%
  • 0.5 cup butter melted
  • 2 cups cheddar cheese shredded
  • 8 slices bacon cooked and crumbled
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 0.25 cup green onions chopped
  • 1 tsp garlic powder

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large pot, boil the cubed potatoes in salted water for about 20 minutes or until fork-tender. Drain well.
  • Mash the potatoes with sour cream, milk, melted butter, salt, pepper, and garlic powder until smooth and creamy.
  • Stir in half of the cheese and half of the crumbled bacon into the mashed potatoes.
  • Transfer the potato mixture to the prepared baking dish, smoothing the top.
  • Top with the remaining cheese and bacon. Bake for 30-35 minutes until the cheese is melted and bubbly.
  • Garnish with chopped green onions before serving warm.

Notes

For an extra kick, try adding a dash of cayenne pepper or paprika before serving.
