Instructions
Preparation Steps
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a large pot, boil the cubed potatoes in salted water for about 20 minutes or until fork-tender. Drain well.
Mash the potatoes with sour cream, milk, melted butter, salt, pepper, and garlic powder until smooth and creamy.
Stir in half of the cheese and half of the crumbled bacon into the mashed potatoes.
Transfer the potato mixture to the prepared baking dish, smoothing the top.
Top with the remaining cheese and bacon. Bake for 30-35 minutes until the cheese is melted and bubbly.
Garnish with chopped green onions before serving warm.
Notes
For an extra kick, try adding a dash of cayenne pepper or paprika before serving.
