  • 0.25 cup granulated sugar for the crust
  • 1 can sweetened condensed milk 14 oz
  • 3 large egg yolks
  • 0.5 cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest finely grated
  • 1 cup heavy whipping cream for topping
  • 2 tablespoons powdered sugar for whipped cream
  • 0.5 teaspoon vanilla extract for whipped cream

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well.
  • Press the mixture into a 9-inch pie dish to form the crust. Bake for 10 minutes, then let cool.
  • In another bowl, whisk together sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth.
  • Pour the lemon filling into the prepared crust. Bake for 30 minutes or until set.
  • Let the pie cool completely, then refrigerate for at least 2 hours.
  • Before serving, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Spread over the pie.

Notes

This pie is best served chilled. Add a sprig of mint or extra lemon zest for garnish if desired.
