Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well.
Press the mixture into a 9-inch pie dish to form the crust. Bake for 10 minutes, then let cool.
In another bowl, whisk together sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth.
Pour the lemon filling into the prepared crust. Bake for 30 minutes or until set.
Let the pie cool completely, then refrigerate for at least 2 hours.
Before serving, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Spread over the pie.
Notes
This pie is best served chilled. Add a sprig of mint or extra lemon zest for garnish if desired.
