Preparation Steps
Place dried apricots, almond meal, honey, vanilla extract, and salt into a food processor and blend until mixture is smooth and sticky.
Roll the mixture into 12 equal-sized balls and place them on a parchment-lined tray.
Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
Dip each truffle into the melted chocolate to coat evenly, then return them to the tray.
Refrigerate for at least 1 hour or until chocolate hardens before serving.
Notes
Store the truffles in an airtight container in the refrigerator for up to one week. These make a great healthy dessert or snack!
