STUFFED PORK CHOPS

  • 4 thick-cut, bone-in pork chops
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp olive oil, divided

Instructions

  • Preheat oven to 375°F (190°C). Cut a pocket into the side of each pork chop.
  • In a bowl, combine bread crumbs, Parmesan, garlic, parsley, thyme, salt, and pepper. Add 2 tbsp olive oil and mix until stuffing is moist.
  • Fill each pork chop pocket with stuffing. Secure with toothpicks if needed.
  • Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes on each side until golden brown.
  • Transfer skillet to the oven and bake for 20-25 minutes, or until pork chops are cooked through and reach an internal temperature of 145°F (63°C).
  • Remove from oven and let rest for 5 minutes. Remove toothpicks and serve. Enjoy your Stuffed Pork Chops!
