- 4 thick-cut, bone-in pork chops
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tbsp chopped fresh thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 tbsp olive oil, divided
Instructions
- Preheat oven to 375°F (190°C). Cut a pocket into the side of each pork chop.
- In a bowl, combine bread crumbs, Parmesan, garlic, parsley, thyme, salt, and pepper. Add 2 tbsp olive oil and mix until stuffing is moist.
- Fill each pork chop pocket with stuffing. Secure with toothpicks if needed.
- Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes on each side until golden brown.
- Transfer skillet to the oven and bake for 20-25 minutes, or until pork chops are cooked through and reach an internal temperature of 145°F (63°C).
- Remove from oven and let rest for 5 minutes. Remove toothpicks and serve. Enjoy your Stuffed Pork Chops!
