How to Make Raspberry Cream Cheese Bites

  • 200 grams (7 oz) of cream cheese, softened
  • 50 grams (1.75 oz) of granulated sugar
  • 1 teaspoon of vanilla extract
  • 150 grams (5.3 oz) of fresh raspberries
  • 200 grams (7 oz) of puff pastry dough
  • 1 egg, beaten (for egg wash)
  • 20 grams (0.7 oz) of powdered sugar (for dusting)

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  • Roll out the puff pastry dough on a lightly floured surface to a 1/8-inch thickness.
  • Cut the dough into small squares, approximately 2 inches by 2 inches.
  • Place a small dollop of the cream cheese mixture in the center of each square.
  • Top the cream cheese with a fresh raspberry.
  • Fold the corners of the dough over the filling to create a small packet and pinch to seal.
  • Brush the tops of the pastries with the beaten egg.
  • Arrange the bites on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  • Allow the bites to cool slightly, then dust with powdered sugar before serving.
