- 200 grams (7 oz) of cream cheese, softened
- 50 grams (1.75 oz) of granulated sugar
- 1 teaspoon of vanilla extract
- 150 grams (5.3 oz) of fresh raspberries
- 200 grams (7 oz) of puff pastry dough
- 1 egg, beaten (for egg wash)
- 20 grams (0.7 oz) of powdered sugar (for dusting)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract until smooth.
- Roll out the puff pastry dough on a lightly floured surface to a 1/8-inch thickness.
- Cut the dough into small squares, approximately 2 inches by 2 inches.
- Place a small dollop of the cream cheese mixture in the center of each square.
- Top the cream cheese with a fresh raspberry.
- Fold the corners of the dough over the filling to create a small packet and pinch to seal.
- Brush the tops of the pastries with the beaten egg.
- Arrange the bites on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
- Allow the bites to cool slightly, then dust with powdered sugar before serving.
