- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups chocolate chips
- 8 slices thick-cut bacon
- Brown sugar for sprinkling
Instructions
- Prepare Candied Bacon:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Lay bacon strips on the baking sheet and sprinkle generously with brown sugar.
- Bake for 15-20 minutes, until bacon is crispy and caramelized. Cool and finely chop.
- Make Cookie Dough:
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to butter mixture, mixing until just combined.
- Fold in chocolate chips and chopped candied bacon.
- Bake Cookies:
- Drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing 2 inches apart.
- Bake at 350°F (175°C) for 10-12 minutes, until edges are golden brown.
- Cool on baking sheet for a few minutes before transferring to wire rack to cool completely.
