Chocolate Peanut Butter Rice Krispie Cups

  • 3 cups (90g) Rice Krispies
  • 1 cup (250g) creamy peanut butter
  • 1/2 cup (170g) honey
  • 1/4 cup (60g) unsalted butter
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  • In a large bowl, mix together Rice Krispies and peanut butter until well-coated.
  • In a small saucepan, melt honey and butter over low heat. Pour over the Rice Krispies mixture and stir until combined.
  • Spoon the mixture into a muffin tin lined with paper liners, pressing it down to form a cup shape.
  • Melt chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  • Pour melted chocolate over the peanut butter cups, spreading evenly.
  • Refrigerate for about 1 hour, or until set and firm.
  • Once set, remove from the tin and enjoy!
